Finally I was able to try ceviche! This was taken at a beach side restaurant in Celestun where we ate lunch last weekend. For those of you who do not know what ceviche is, it is a dish where the fish (or meat I was told) is cooked chemically rather then with heat. This usually is done with A TON of lemon juice. The fish is usually then seasoned and served as is. This process keeps the risk natural color of the fish, although some people do not necessarily enjoy the differences in texture from a heat cooked meal. I enjoyed everything!
